Always remember that, averaging all cuts, buffalo has 76% less fat than beef. The lower fat content in buffalo means that the meat will cook faster so it is especially important not to overcook your buffalo. With that in mind and following some very simple guidelines, you can use buffalo in any of your favorite meat recipes. The most important rule of thumb to remember: cook with lower heat and use moisture retaining techniques. Searing buffalo meat on both sides helps to seal in natural juices. When cooking steaks and burgers, anticipate that the meat will be ready a little faster than beef to the same degree of doneness.

Cooking Roasts   

 Cook buffalo roasts at 275 F for about the same length of time you would cook a comparable cut and size of beef roast. Use a meat thermometer to measure the internal temperature to 160 F for best results. Roasts are also great in a slow cooker with veggies and water to make a flavorful gravy. Cooking Steak

As with any great steak, buffalo steaks are best cooked medium rare to medium. Any cut of meat, be it beef or buffalo, can easily be turned to leather if you cook it too long. If you are using a gas grill, keep the flame set at medium to low. Keep the lid closed to retain moisture. For the first time you grill buffalo steaks, stay by the grill and keep an eye on them to make sure you don't overcook them. Generally speaking, an 8oz. buffalo steak will take about 10 minutes to prepare medium.

In the Broiler: Move your oven rack one notch lower than what you would normally broil a cut of beef. Shorten the cooking time and check periodically

On the stove: Keep your stove turned to medium. If you are using a saute pan, use the lid while cooking

Cooking Burgers

You can use buffalo burger in any traditional recipe that calls for ground beef. From burgers on the grill to chili in the kettle, buffalo burger is the best way to enjoy healthy eating throughout the week.
On the stove or grill: use medium heat when cooking burgers. Burger patties should be made no less than 1/2 inch thick. Do not flatten burgers out with a spatula, this forces the natural juices out.
